Now that the weather is wonderful, I want to be outside as much as possible. The kids want to play. We have worked all day, and just want to enjoy the sunshine. No one wants to be stuck inside cooking while the world is so pretty. We look for simple meals during the spring and summer. Here is a quick one we put together. This is even faster if you use this shortcut.
This is also a great way to use leftovers to create shortcut meals. I had cooked a lot of chicken in the crockpot on Monday which allows us to eat the seasoned meat for dinner one night but save the rest for other meals during the week. I love cooking something once- and in the crockpot it doesn’t have to be monitored at all. If you use a crockpot liner- there is no clean-up either.
Recipe for my Chicken Caesar:
- 3 shredded chicken breasts
- 1/2 cup caesar salad dressing
- 1 cup shredded cheese – we used gouda
- handful of chopped spinach
Just stir up the ingredients until they are mixed well. Adjust any ingredients for flavor. Feel free to add other seasonings you may like. I sometimes add garlic or chopped onion.
Make it your own! Ultimately, you are now done with dinner. You snuck in veggies, protein, dairy, and if you serve it on tortilla, in a pita, or with chips- you have grains covered to. Healthy, balanced meal in no time.
We used leftover seasoned chicken breasts- you can use whatever chicken you have on hand. If desperate- canned chicken works too.
You can serve as is and be done, or you can put it in the oven or toaster over and let the cheese get melty. We have eaten this as a chicken caesar dip with chips, or on tortillas.
This stores well, is great to take for lunches, and has great flavor.
