Dairy envy is a real thing if you aren’t able to enjoy things like ice cream, or coffee creamer, or cheese, and so much more on a regular basis. When I had to avoid dairy while nursing my son, it was so hard. I didn’t really realize all the things that dairy was in. It was a reality check for me to have to avoid Cheetos, cheese quesadillas, coffee, ice cream, whipped cream, baked potatoes, butter, and more.
Going out to eat means asking a lot of questions, and clarifying what is on foods. Even simply ordering steamed veggies meant a game of 20 questions, then picking apart the food when it arrived to verify that it was safe to eat- many times it still was not.
The hardest thing for me, was coffee. I work 10 hour shifts that start at 6am. I need coffee, well I have found some other ways, but now I found I like the taste of coffee- with cream and sugar. It’s the enjoyment of it.
I tried soy latte’s. They are NOT the same. Black coffee is not something I can do quite yet. Even if I cut the sugar out to be healthier, I need the creamer. So what do you do? I am so glad that there is a lactose free alternate for those of us that need dairy free alternatives. Lactaid is 100% dairy without the lactose and without the discomfort. You can trust that it will save you from the dairy discomfort.
Well, since it is officially Pumpkin Spice season, I will bring back my awesome pumpkin spice latte, with some lactose free alterations for you.
Homemade Pumpkin Spice Latte
1/2 cup Lactaid milk
1 tablespoon unsweetened canned pumpkin puree
1 teaspoon packed light brown sugar
1/4 teaspoon pumpkin pie spice
1 teaspoon vanilla extract
1 cup brewed strong coffee
1 teaspoon white sugar
4 T of Lactaid milk
add some whipped non-dairy topping
Mix all ingredients except coffee, half and half, white sugar, whipped cream and nutmeg in a microwaveable safe container.
Microwave for 1-2 minutes.
Pour into a tall glass, then slowly add coffee
Mix in white sugar and the 2T of the Lactaid milk
Add whipped cream and nutmeg to the top
If you need one more for options, here is a yummy Almond Mocha that Lactaid shared on their website.
Almond Mocha Coffee
- 2 teaspoons instant coffee granules, regular or decaffeinated
- 4 tablespoons boiling water
- 1 3/4 cups LACTAID® Chocolate Lowfat Milk
- 1/2 teaspoon almond extract
- Whipped nondairy dessert topping (optional)
- Dissolve instant coffee into boiling water. Add in LACTAID® Chocolate Lowfat Milk, and almond extract and stir.
So now that we don’t have anymore coffee dairy envy, let’s host some friends over and add in a nice dessert. You can make my allergy limited yummy Spice cake for a brunch or girl’s night.
