This homemade muffin recipe is my family favorite. It has been around since the 70’s, when my mom learned it as a new wife. You can change what you put in it from blueberries, to our favorites raspberries or chocolate chips.
2 cups flour
1/2 teaspoon salt
2 teaspoons baking powder
1/2 cup butter
1 1/2 cups sugar
1/2 cup milk
2 cups fruit
Cream butter then add sugar and beat until fluffy. Add the 2 eggs one at a time, and start slowly adding the dry ingredients. Once mixing well, add the milk. If using a mixer, turn it off and add the fruit by hand stirring. Make sure your tins are greased and floured well, or use muffin papers. Add mixture to tins, keeping it only 2/3 full. Sprinkle with sugar.
Bake at 375 degrees for 25-30 minutes. Allow muffins to cool at least 30 minutes before removing from pan if not using paper wrappers. Otherwise, just let it cool down before eating.
You can also make this into a cake by using a 9×13 cake pan. My favorite is the raspberries. My kids love chocolate chip.
